Hi Mary,
Sorry I’m a blogger, not a knife-sharpener.
There are knife sharpening services. There’s one in London for example. Just google ‘knife sharpening’ and you should find one near you.
Interestingly Sabatier themselves just offer advice on how to sharpen, I don’t see that they have a knife-shapening service.
